A cozy and flavorful Beef & Butternut Squash Chili perfect for chilly nights, combining robust flavors and wholesome ingredients.

Ingredients

Scale
  • 1 lb lean ground beef (80/20)
  • 2 cups butternut squash, peeled and diced
  • 1 large yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 2 cups beef broth
  • Salt and pepper to taste

Instructions

  1. Prep the squash: Start by peeling and chopping the butternut squash into bite-sized cubes.
  2. Sauté the aromatics: In a large pot over medium heat, add a splash of olive oil. Toss in the chopped onion and bell pepper, and sauté until they’re translucent and fragrant (about 5-7 minutes).
  3. Brown the beef: Push the sautéed veggies to one side of the pot and add the ground beef.
  4. Add the garlic and spices: Once your beef is browned, throw in the minced garlic alongside the chili powder and cumin.
  5. Incorporate the tomatoes: Add your canned tomatoes, beef broth, and the butternut squash cubes.
  6. Simmer away: Bring your chili to a gentle boil, then reduce the heat and let it simmer uncovered for about 20-30 minutes.
  7. Beans: In the last 10 minutes of cooking, stir in your kidney beans.
  8. Finish up: Once everything is soft and well-cooked, remove the pot from heat.
