Comforting Beef Stew

A warm and hearty beef stew packed with tender chunks of beef, fresh vegetables, and savory herbs, perfect for cozy dinners.

Ingredients

Scale
  • 2 lbs beef chuck
  • 4 cups beef broth (low-sodium)
  • 3 medium carrots, diced
  • 2 large potatoes, cubed
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 cup red wine
  • 2 teaspoons dried thyme
  • Salt and pepper, to taste
  • 2 tablespoons olive oil

Instructions

  1. Prep your ingredients by gathering and prepping them—dice your carrots, chop your onion, and cube your potatoes.
  2. Sear the beef by heating olive oil in a large pot and browning the beef chunks in batches on all sides.
  3. Sauté the vegetables by adding chopped onions to the pot and cooking until translucent, then add minced garlic.
  4. Add tomato paste and let it simmer for a couple of minutes, then pour in the red wine and scrape any browned bits from the bottom.
  5. Combine the browned beef back into the pot with carrots, potatoes, thyme, and broth. Stir to mix well.
  6. Let it simmer by reducing the heat to low, covering the pot, and cooking for about 1.5 to 2 hours.
  7. Check for doneness by ensuring the beef is fork-tender and vegetables are soft.
  8. Serve the stew in bowls, garnishing with fresh parsley as desired.

Notes

For added flavor, consider adding a bay leaf or Worcestershire sauce. This stew tastes even better the next day after flavors meld.
