Baked Brown Butter and Pistachio Doughnuts

Soft, fluffy baked doughnuts infused with the rich flavor of brown butter and topped with crunchy pistachios.

  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1/2 teaspoon freshly grated nutmeg
  • 2/3 cup granulated sugar
  • 1 cup shelled pistachios, finely chopped and divided
  • 8 tablespoons (1/2 cup / 4 ounces) unsalted butter, melted and browned
  • 2 large eggs
  • 1 cup buttermilk
  • 1 teaspoon pure vanilla extract
  • 2 cups powdered sugar
  • Pinch of salt
  • 2 tablespoons brown butter
  • 3 to 4 tablespoons milk
  • 1 teaspoon pure vanilla extract (for the glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your doughnut pan.
  2. Brown the unsalted butter in a saucepan over medium heat until golden brown and nutty.
  3. Mix the all-purpose flour, baking powder, baking soda, salt, and nutmeg in a large bowl.
  4. Combine the sugar and eggs until light and fluffy, then stir in the warm brown butter, buttermilk, and vanilla extract.
  5. Combine the wet ingredients with the dry ingredients just until combined, then fold in half of the chopped pistachios.
  6. Fill the doughnut cavities with the batter about 2/3 full.
  7. Bake for 12–15 minutes until golden and a toothpick comes out clean.
  8. Cool the doughnuts in the pan for 5 minutes before transferring to a wire rack.
  9. Make the glaze by whisking together the powdered sugar, reserved brown butter, milk, a pinch of salt, and vanilla extract until smooth.
  10. Glaze the cooled doughnuts by dipping the tops into the glaze and topping with remaining pistachios.

Notes

For a vegan option, swap the eggs for flax eggs, and use plant-based butter and non-dairy milk.
