  • 1 cup all-purpose flour
  • 1 cup cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 1/2 cup buttermilk
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare your bundt pan by greasing it and dusting with cocoa powder.
  3. Grate the zucchini finely and squeeze out excess moisture.
  4. Mix the wet ingredients in a bowl until creamy.
  5. Combine dry ingredients in another bowl.
  6. Add the dry mixture to the wet mixture and stir until just combined.
  7. Fold in the zucchini and chocolate chips gently.
  8. Pour the batter into the prepared bundt pan.
  9. Bake for 45-50 minutes or until a toothpick comes out clean.
  10. Cool for 10 minutes in the pan before inverting onto a cooling rack.
  11. Glaze or dust with powdered sugar before serving.
