Peach Lemonade Cheesecake Tacos

A fun and delightful twist on classic cheesecake, these Peach Lemonade Cheesecake Tacos are perfect for summer gatherings.

Ingredients

  • Taco shells (corn, dessert-style, or mini pie crusts)
  • 8 oz cream cheese, softened
  • 2 ripe peaches, diced
  • 1/4 cup fresh-squeezed lemonade
  • 2 tbsp sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and warm the taco shells on a baking sheet for about 5 minutes.
  2. Combine the softened cream cheese and sugar in a mixing bowl and blend until creamy and smooth.
  3. Add the fresh-squeezed lemonade gradually, mixing until combined.
  4. Dice the peaches and toss them in lemon juice if desired.
  5. Fold the diced peaches into the cream cheese filling carefully.
  6. Fill each taco shell with the peach cream cheese mixture.
  7. Chill in the fridge for at least 30 minutes before serving.

Notes

Serve the tacos with extra lemonade drizzled on top and crushed graham crackers for a classic cheesecake crunch.
