Ultimate Pumpkin Sourdough Bread

This pumpkin sourdough bread combines the tangy flavor of sourdough with the sweetness of pumpkin, perfect for fall.

Ingredients

  • Sourdough Starter (100g)
  • Bread Flour (400g)
  • Pumpkin Purée (200g)
  • Water (300ml)
  • Salt (10g)
  • Cinnamon and Nutmeg (optional, to taste)

Instructions

  1. Mix your dough: In a large mixing bowl, combine your sourdough starter with lukewarm water. Stir in the pumpkin purée until well blended. Add in the bread flour and salt. Mix until you have a shaggy dough.
  2. Autolyse: Allow the dough to rest for about 30 minutes.
  3. Knead and stretch: After the autolyse, knead the dough for about 10 minutes until it’s smooth and elastic.
  4. First rise (Bulk Fermentation): Place your dough in a greased bowl, cover it, and let it rise for about 4-6 hours.
  5. Shape the dough: Turn it out onto a lightly floured surface and shape it into a round loaf.
  6. Final proof: Place it in a floured proofing basket and let it rise for another hour.
  7. Bake: Preheat your oven to 450°F (230°C) and bake the loaf for about 30 minutes, then remove the lid and bake for an additional 15 minutes.
  8. Cool down: Let the bread cool on a wire rack.
