The Best Zucchini Bread

  • 2 cups grated zucchini
  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prep your loaf pan by greasing it or lining it with parchment paper.
  3. Grate the zucchini and squeeze out excess moisture using a kitchen towel.
  4. Mix the all-purpose flour, baking soda, baking powder, cinnamon, and salt in a large mixing bowl.
  5. Combine the eggs, sugar, vegetable oil, and vanilla extract in another bowl until smooth.
  6. Incorporate the grated zucchini into the wet mixture.
  7. Combine the wet mixture with the dry ingredients, folding gently.
  8. Add nuts or chocolate chips if using.
  9. Pour the batter into the prepared loaf pan.
  10. Bake for 50-60 minutes until a toothpick comes out clean.
  11. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Serve thick slices warm with butter, cream cheese, or hazelnut spread. Freezes well for up to three months.
