  • 4 large eggs
  • 1/4 cup milk
  • Salt and pepper to taste
  • 1/2 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup cooked sausage or bacon, crumbled
  • 1/4 cup chopped bell peppers
  • 1/4 cup sliced green onions
  • Cooking spray or butter for greasing

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the English muffins by slicing them in half and placing cut-side up on a baking sheet lined with parchment paper.
  3. Grease the muffin tops with cooking spray or butter.
  4. Whisk together your eggs, milk, salt, and pepper until frothy.
  5. Cook the egg mixture in a skillet over medium heat, stirring until set lightly.
