  • 1 pound Chicken Breast
  • ½ cup Buffalo Sauce
  • 4 cups Romaine Lettuce (or Mixed Greens)
  • 1 cup Celery, diced
  • ½ cup Red Onion, thinly sliced
  • 1 cup Cherry Tomatoes, halved
  • ½ cup Blue Cheese Crumbles (or Feta)
  • ¼ cup Ranch or Blue Cheese Dressing

Instructions

  1. Cook the Chicken: Preheat your grill or stovetop pan over medium-high heat. Season chicken with salt, pepper, and garlic powder. Grill for 6-7 minutes on each side until cooked through.
  2. Prepare the Buffalo Sauce: In a small saucepan, combine hot sauce, butter, and vinegar over medium heat. Stir until well mixed.
  3. Chop the Veggies: Slice the greens and place in a large bowl. Dice celery, tomatoes, and slice red onion, then toss into the bowl.
  4. Shred the Chicken: Remove cooked chicken from the grill, let rest for 5 minutes, then shred and toss with buffalo sauce.
  5. Assemble the Salad: Pour buffalo chicken over the greens and veggies. Add blue cheese crumbles and drizzle with dressing.
  6. Serve: Toss lightly before serving to mix flavors. Enjoy!
