Cowboy Butter Chicken Pasta

A creamy and flavorful pasta dish combining tender chicken with a rich cowboy butter sauce, perfect for busy weeknights or cozy gatherings.

  • 1 pound Chicken Breasts
  • 8 oz Pasta (penne, rotini, or fettuccine)
  • 1/2 cup Unsalted Butter
  • 4 cloves Garlic (minced)
  • 1 cup Heavy Cream
  • 1/2 cup Chicken Broth
  • 1/2 cup Parmesan Cheese (grated)
  • 1 teaspoon Paprika
  • 1 teaspoon Italian Seasoning
  • Salt and Pepper (to taste)
  • Fresh Parsley (for garnish)

Instructions

  1. Boil a large pot of salted water and add your pasta. Cook it according to the package instructions until al dente. Reserve about 1 cup of pasta water, drain, and set aside.
  2. Melt 2 tablespoons of butter in a large skillet over medium-high heat. Add the sliced chicken breasts, season with salt and pepper, and sauté for about 6-7 minutes until golden brown and cooked through. Remove the chicken and set aside.
  3. Reduce the heat to medium in the same skillet and add the remaining butter. Once melted, add in the minced garlic and sauté for about a minute until fragrant.
  4. Stir in the chicken broth and bring to a simmer. Then add the heavy cream, paprika, and Italian seasoning. Let it bubble and thicken for another 3-4 minutes.
  5. Add the Parmesan cheese and stir until the sauce is creamy and smooth. If too thick, gradually add reserved pasta water to reach the desired consistency.
  6. Combine the cooked pasta and sautéed chicken back into the skillet. Toss to coat the pasta in the buttery sauce and let it simmer for another minute or two.
  7. Finish with a sprinkle of fresh parsley and additional Parmesan if desired.

Notes

Serve in warm bowls and consider garnishing with a splash of fresh herbs, red pepper flakes, or a lemon wedge.
