Cajun Street Corn Pasta

A flavorful fusion of street corn and pasta, this dish brings the vibrant tastes of Cajun cooking to your kitchen.

Ingredients

  • Pasta (penne, fusilli, or spaghetti)
  • Fresh corn on the cob (or canned/frozen corn)
  • Cajun seasoning
  • Heavy cream (or low-fat milk/coconut cream)
  • Parmesan cheese (or nutritional yeast for vegan option)
  • Butter (or olive oil for lighter option)
  • Fresh parsley (for garnish)

Instructions

  1. Cook the Pasta by boiling salted water and cooking according to package instructions until al dente. Reserve a cup of pasta water before draining.
  2. Prep the Corn by grilling or roasting fresh corn until charred or sauté canned/frozen corn in butter until heated.
  3. Whip up the Sauce by melting butter in a skillet, adding corn, and sauté for 2 minutes before adding Cajun seasoning.
  4. Pour in heavy cream and let it simmer until thickened, adding reserved pasta water to reach desired consistency, then stir in cheese.
  5. Combine Pasta and Sauce by adding drained pasta to skillet and tossing to coat.
  6. Garnish and Serve by topping with fresh parsley and serving in large bowls.

Notes

For added protein, consider tossing in grilled shrimp or chicken. For a vegan option, substitute heavy cream with cashew cream and use nutritional yeast instead of parmesan.
