California Roll Sushi Bowls

A delightful sushi bowl that combines the fresh flavors of California rolls with the convenience of a bowl meal.

Ingredients

  • Sushi Rice (1 cup)
  • Rice Vinegar (2 tablespoons)
  • Imitation Crab (1 cup)
  • Avocado (1 large)
  • Cucumber (1 medium)
  • Nori Sheets (1-2 sheets)
  • Soy Sauce (for serving)
  • Sesame Seeds (1 tablespoon, optional)
  • Green Onions (for garnish)

Instructions

  1. Cook the Sushi Rice: Rinse the sushi rice under cold water until the water runs clear. In a medium pot, combine the rinsed rice with 1 ¼ cups of water. Bring it to a boil, then reduce heat to low and simmer for about 15 minutes.
  2. Mix the Rice with Seasoning: Fluff the cooked rice and transfer it to a large bowl. Pour the vinegar mixture over the rice and fold gently until combined.
  3. Prepare the Fillings: Chop cucumber and avocado into desired sizes. If using imitation crab, shred or chop it as preferred.
  4. Assemble the Bowls: Scoop sushi rice into bowls and top with cucumber, avocado, and imitation crab.
  5. Drizzle with Soy Sauce and Garnish: Add soy sauce, sesame seeds, and sliced green onions on top.

Notes

Keep components separate if prepping in advance to avoid sogginess, particularly the avocado.
