Carrot Date Spice Cake

  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • ½ teaspoon salt
  • 1 cup granulated sugar
  • ½ cup packed brown sugar
  • ¾ cup vegetable oil
  • 4 large eggs
  • 2 cups grated carrots
  • 1 cup pitted dates, chopped
  • ½ cup chopped walnuts or pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. Whisk together the flour, baking soda, baking powder, cinnamon, ginger, and salt in a large mixing bowl.
  3. Beat together the granulated sugar, brown sugar, and vegetable oil until well combined, then add the eggs one at a time.
  4. Stir in the grated carrots and chopped dates.
  5. Gradually add the flour mixture to the wet ingredients, mixing just until combined.
  6. Evenly distribute the batter between the prepared cake pans and bake for 25-30 minutes.
  7. Cool the cakes in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

Notes

For a lighter version, substitute vegetable oil with unsweetened applesauce. You can also use flax eggs for a vegan option.
