Cheesy Taco Potatoes

A delicious fusion of cheesy potatoes and taco flavors, perfect for a cozy meal or gathering.

  • 4 large Russet Potatoes
  • 1 pound Ground Beef or Ground Turkey
  • 23 tablespoons Taco Seasoning
  • 2 cups Shredded Cheddar Cheese
  • 1 cup Sour Cream
  • 1 cup Diced Tomatoes
  • 1/2 cup Chopped Green Onions
  • 2 tablespoons Olive Oil
  • Salt and Pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Scrub the potatoes clean, poke holes in them, and drizzle with olive oil and salt. Bake for 45-60 minutes until fork-tender.
  2. In a skillet, heat olive oil and brown the ground beef (or turkey) for about 5 minutes. Mix in taco seasoning and a couple tablespoons of water, and let it simmer for another 5 minutes.
  3. Once the potatoes are done, cut them in half and scoop out some flesh. Combine the scooped potato, half of the cheese, the meat mixture, sour cream, and diced tomatoes in a bowl.
  4. Spoon the mixture back into the potato halves, top with remaining cheese, and bake for another 15 minutes.
  5. Serve warm, garnishing with green onions or cilantro and extra sour cream if desired.

Notes

Feel free to customize with your favorite toppings and ingredients. Leftovers reheat well!
