Chicken Bacon Ranch Pasta

A comforting one-pot Chicken Bacon Ranch Pasta that’s quick, easy, and perfect for family dinners.

  • 8 oz Pasta (Rotini or Penne)
  • 2 cups Cooked Chicken Breast, shredded
  • 6 slices Bacon, chopped
  • 1/2 cup Ranch Dressing
  • 4 oz Cream Cheese
  • 1 cup Shredded Cheese (Cheddar or Mozzarella)
  • 1/4 cup Green Onions, chopped
  • 2 cloves Garlic, minced
  • Seasoning (Salt, Pepper, and Italian Herbs)

Instructions

  1. Cook the Pasta by bringing a large pot of salted water to a boil. Add pasta and cook according to package instructions until al dente. Drain and set aside, reserving a cup of pasta water.
  2. Prepare the Bacon in a large skillet over medium heat until crispy, about 5-7 minutes. Transfer to a plate lined with paper towels, leaving 1 tablespoon of grease in the skillet.
  3. Sauté the Aromatics by adding minced garlic and chopped green onions to the skillet. Sauté for about a minute until fragrant.
  4. Bring in the Chicken to the skillet. If it’s seasoned, great! If not, add salt, pepper, and Italian herbs. Stir for a few minutes until heated through.
  5. Make the Sauce by lowering the heat and adding cream cheese. Once blended, pour in the ranch dressing and stir until combined. Add reserved pasta water if the sauce is too thick.
  6. Combine with Pasta, tossing everything together to coat the pasta in the creamy sauce.
  7. Finish with Cheese and Bacon by stirring in shredded cheese until melted, then fold in the crispy bacon and garnish with green onions.
  8. Plate It Up and serve immediately, optionally topping with cracked black pepper and parsley.

Notes

For a lighter version, substitute pasta with spiralized zucchini or spaghetti squash.
