Chickpea Feta Avocado Salad

A vibrant and nutritious salad featuring creamy avocado, tangy feta, and hearty chickpeas. Perfect for any meal or gathering.

  • 1 can Chickpeas, drained and rinsed
  • 1 Fresh Avocado, ripe
  • ½ cup Feta Cheese, crumbled
  • 1 cup Cherry Tomatoes, halved
  • 1 medium Cucumber, diced
  • ¼ small Red Onion, finely chopped
  • ¼ cup Fresh Parsley, chopped
  • 3 tablespoons Olive Oil
  • Juice from 1 Lemon
  • Salt and Pepper, to taste

Instructions

  1. Start by gathering all your ingredients. Rinse and drain your chickpeas, wash your veggies, and chop everything up!
  2. Dice the cucumber and halve the cherry tomatoes. Quickly chop the red onion and parsley.
  3. Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it slightly with a fork.
  4. Combine the chickpeas, cherry tomatoes, cucumber, red onion, and parsley in a large bowl.
  5. Gently fold in the mashed avocado and crumbled feta cheese.
  6. Whisk together olive oil, lemon juice, salt, and pepper in a small bowl. Drizzle this dressing over the salad.
  7. Toss everything gently together using a spatula or serving spoons.
  8. Taste and adjust with more salt, pepper, or lemon juice as desired.
  9. Chill in the fridge for 15-30 minutes before serving, if time allows.
  10. Serve cold or at room temperature.

Notes

This salad can be meal prepped; just keep the dressing separate until you’re ready to serve for maximum freshness.
