Chickpea Feta Avocado Salad

A fresh and flavorful salad featuring creamy avocado, salty feta, and hearty chickpeas, all coated in a zesty dressing.

  • 1 can of chickpeas (15 oz)
  • 1 ripe avocado
  • 1 cup cherry tomatoes, halved
  • ½ cup feta cheese, crumbled
  • ½ cucumber, diced
  • 2 tablespoons red onion, finely chopped
  • Fresh herbs (like parsley or cilantro), for garnish
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Instructions

  1. Prep your ingredients by rinsing the canned chickpeas under cold water in a colander.
  2. Chop and dice your cherry tomatoes, cucumber, and red onion into bite-sized pieces.
  3. Create your dressing by whisking together lemon juice and olive oil, seasoning with salt and pepper.
  4. Mix everything together in a large bowl: chickpeas, chopped tomatoes, cucumber, red onion, and feta.
  5. Add the diced avocado gently into the salad.
  6. Dress the salad with your homemade dressing and toss it gently.
  7. Garnish with fresh herbs before serving.

Notes

Best enjoyed fresh. Store leftovers for up to two days, and add a squeeze of lemon to slow browning of avocado.
