Chickpea Feta Avocado Salad

A vibrant and refreshing salad that combines chickpeas, creamy avocado, and tangy feta for a nutritious and flavorful meal.

  • 1 can Chickpeas (1.5 cups cooked)
  • 1 large Avocado
  • ½ cup Feta cheese, crumbled
  • 1 cup Cherry tomatoes, halved
  • ¼ cup Red onion, finely chopped
  • ½ cup Bell pepper, chopped
  • 3 tablespoons Olive oil
  • Juice from 1 Lemon
  • Salt and black pepper, to taste

Instructions

  1. Rinse your chickpeas under cold water if you’re using canned ones. Drain and allow them to dry slightly.
  2. Chop your tomatoes, bell pepper, red onion, and avocado into bite-sized pieces.
  3. Whisk together olive oil, lemon juice, salt, and pepper in a small bowl to make the dressing.
  4. Toss together the chickpeas, chopped vegetables, and feta cheese in a large bowl.
  5. Pour the dressing over the top and gently combine everything.
  6. Taste and adjust the flavors according to your preference.
  7. Serve and enjoy your salad!

Notes

For a creamy texture, peel the skins off the chickpeas. Keep avocado separate until serving to prevent browning.
