These guilt-free Chickpea Truffles are packed with protein and fiber, perfect for any occasion and easily customizable for your taste buds.

Ingredients

  • 1 cup Chickpeas (Canned or Cooked), drained and rinsed
  • 1/2 cup Peanut Butter (or Nut Butter of Your Choice)
  • 1/4 cup Maple Syrup or Honey
  • 1 cup Oats (Quick or Rolled)
  • 1/4 cup Cocoa Powder
  • Flavor Add-Ins (Optional): vanilla extract, cinnamon, sea salt

Instructions

  1. Prep your chickpeas: Drain and rinse canned chickpeas. If using dried, ensure they are soaked and cooked.
  2. Mash ’em up: In a bowl, combine chickpeas, peanut butter, and maple syrup. Mash until smooth.
  3. Mix in the oats and cocoa: Stir until well-integrated.
  4. Flavor it up: Add optional flavor add-ins and mix well.
  5. Form the truffles: Roll into 1-inch balls using clean hands.
  6. Chill and set: Place on a parchment-lined baking sheet and refrigerate for at least 30 minutes.
