Ultimate Corn Salad

A fresh and vibrant corn salad perfect for any occasion, bursting with flavor and joy.

Ingredients

  • 4 cups corn (fresh, canned, or frozen)
  • 1 medium red onion, diced
  • 1 bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • Salt and pepper to taste

Instructions

  1. Gather your ingredients and prep them for easy access.
  2. Prep the corn by shucking and slicing kernels off (if fresh) or rinsing canned/frozen corn.
  3. Dice the onion finely.
  4. Chop the bell pepper into small pieces.
  5. Halve the cherry tomatoes.
  6. Chop the cilantro coarsely.
  7. Combine the corn, onion, bell pepper, tomatoes, and cilantro in a large bowl.
  8. Whisk together olive oil, lime juice, and honey for the dressing.
  9. Season the dressing with salt and pepper to taste.
  10. Pour the dressing over the salad and toss gently.
  11. Chill the salad in the fridge for at least 30 minutes.
  12. Serve and enjoy!

Notes

For optimal flavor, let the salad chill before serving. Can be made in advance, but add avocado just before serving to prevent browning.
