Crab Fried Rice

A comforting and creative dish that combines succulent crab meat with vibrant veggies and rich flavors.

  • 2 cups cooked rice
  • 1 cup crab meat
  • 2 tablespoons soy sauce
  • 2 green onions, chopped
  • 1 carrot, diced
  • 2 eggs, beaten
  • 2 tablespoons vegetable oil
  • Salt and pepper to taste

Instructions

  1. Start by getting everything chopped and prepped: dice the carrot, chop the green onions, and fluff up that cooked rice.
  2. Place a large wok or skillet over medium-high heat. Add the vegetable oil and let it shimmer.
  3. Cook the diced carrot for about 2-3 minutes until tender but still crispy.
  4. Create a space in the middle of the pan, pour in the beaten eggs, and scramble until just set.
  5. Next, add the cooked rice and break up any clumps with your spatula.
  6. Gently fold in the crab meat and soy sauce, stirring to prevent breaking the crab. Heat through for about 2 minutes.
  7. Toss in the chopped green onions and give everything a final toss to combine.
  8. Taste your creation and add salt and pepper as needed.

Notes

For a spicier version, add sriracha while cooking the eggs. This dish can also be enjoyed with a light salad or miso soup.
