Ingredients

  • 3 medium Cucumbers
  • 1 cup Greek Yogurt
  • 2 tablespoons Sesame Oil
  • 2 tablespoons Soy Sauce
  • 2 tablespoons Rice Vinegar
  • 1 tablespoon Honey or Maple Syrup
  • 1 clove Garlic, minced
  • 2 teaspoons Sesame Seeds, toasted
  • 2 stalks Green Onions, chopped
  • Salt and Pepper, to taste

Instructions

  1. Prep the Cucumbers by washing them and slicing thinly.
  2. Make the Creamy Dressing by whisking together Greek yogurt, sesame oil, soy sauce, rice vinegar, honey, and minced garlic until smooth.
  3. Mix the sliced cucumbers in a large bowl with the dressing until well coated.
  4. Season lightly with salt and pepper, then garnish with sesame seeds and green onions.
  5. Serve immediately or chill for about 30 minutes for enhanced flavors.
