Creamy Corn Salad

A vibrant and refreshing summer salad combining sweet corn, juicy cherry tomatoes, and a creamy dressing, perfect for barbecues and picnics.

  • 4 cups corn kernels (fresh or canned)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/2 cup bell peppers, diced
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 2 tablespoons lime juice
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Prep your corn: If using fresh, boil for 5-7 minutes, cool, and cut kernels off. If using canned, drain and rinse.
  2. Chop the veggies: Dice red onion and bell peppers, and halve the cherry tomatoes.
  3. Mix up the dressing: Combine mayonnaise, sour cream, and lime juice in a large bowl, whisk until smooth.
  4. Combine the goodness: Add corn, chopped veggies, and dressing to the bowl, fold gently together.
  5. Taste and adjust: Season with more salt, pepper, or lime juice to your preference.
  6. Chill (optional): Let sit in the refrigerator for about 30 minutes to meld flavors.
  7. Serve with love: Garnish with cilantro or herbs of choice before serving.

Notes

Feel free to adjust ingredients and seasonings according to personal taste! A squeeze of lemon can be a great substitute for lime if needed.
