Creamy Gnocchi with Spinach and Feta

  • 4 cups Fresh Spinach
  • ¾ cup Feta Cheese
  • 1 cup Heavy Cream
  • 3 cloves Garlic, minced
  • 2 tablespoons Olive Oil
  • Salt and Pepper to taste

Instructions

  1. Boil the Water: Start by bringing a large pot of salted water to a rolling boil.
  2. Add the Gnocchi: Toss in the gnocchi; when they float to the top (about 2-3 minutes), they’re ready.
  3. Drain and Set Aside: Carefully drain the gnocchi in a colander and drizzle with olive oil.
  4. Heat the Oil: In a large skillet over medium heat, add your olive oil and warm it for about 1 minute.
  5. Add the Garlic: Toss in the minced garlic and sauté for about 30 seconds.
  6. Add the Spinach: Incorporate the fresh spinach and sauté until it wilts (about 2-3 minutes).
  7. Pour in the Cream: Reduce the heat to low and add the heavy cream, stirring to combine.
  8. Add Feta: Crumble and melt the feta cheese into the cream mixture.
  9. Season with Salt and Pepper: Adjust the seasoning to your taste.
  10. Add the Gnocchi: Gently fold the gnocchi into the creamy sauce.
  11. Simmer Together: Allow to simmer for a couple of minutes.
  12. Serve: Plate the gnocchi, garnishing with extra feta and olive oil.
