Creamy Herb Chicken with Mashed Potatoes and Honey Glazed Carrots

Ingredients

  • Boneless, Skinless Chicken Breasts (4 pieces)
  • Olive Oil (2 tablespoons)
  • Garlic (3 cloves, minced)
  • Heavy Cream (1 cup)
  • Mixed Fresh Herbs (1 tablespoon each of parsley, thyme, and rosemary)
  • Salt and Pepper (to taste)
  • Yukon Gold Potatoes (2 pounds)
  • Butter (4 tablespoons)
  • Milk (1 cup)
  • Carrots (1 pound, sliced)
  • Honey (2 tablespoons)
  • Butter (1 tablespoon)
  • Thyme (1 teaspoon, fresh or dried)

Instructions

  1. Prepare the chicken by seasoning it with salt and pepper on both sides. Heat olive oil in a skillet over medium-high heat and place chicken in the pan.
  2. Sear the chicken for 6-7 minutes on one side until golden, then flip and add minced garlic.
  3. Add heavy cream and mixed herbs, reduce heat, and simmer for about 10 minutes until cooked through.
  4. Make the mashed potatoes by boiling chopped Yukon Gold potatoes in salted water until tender.
  5. Mash the potatoes with butter, milk, and salt until smooth and creamy.
  6. Prepare the honey-glazed carrots by melting butter, then adding carrots, honey, and thyme, cooking until tender.
  7. Plate the dish by serving mashed potatoes, chicken with sauce, and honey-glazed carrots on the side.

Notes

For extra creamy mashed potatoes, keep them over low heat for a minute to evaporate excess moisture.
