  • 1 cup Greek Yogurt
  • 1 cup Oat Flour
  • 1/2 cup Sweetener of Choice (honey, maple syrup, or erythritol)
  • 1 tsp Vanilla Extract
  • 1 tsp Baking Powder
  • 1 tsp Cinnamon
  • 1 Egg or Egg Substitute

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare an 8-inch springform pan by greasing it or lining it with parchment paper.
  3. Mix the dry ingredients: oat flour, baking powder, cinnamon, and salt in a bowl.
  4. Combine the wet ingredients: Greek yogurt, sweetener, and vanilla extract until smooth.
  5. Add the egg and mix until incorporated.
  6. Fold in the dry ingredients gently to create a batter.
  7. Pour the mixture into the prepared pan and smooth the top.
  8. Bake for 25-30 minutes, until edges are set and the center is slightly soft.
  9. Cool the cheesecake at room temperature for 10 minutes, then run a knife around the edges before removing the sides.
  10. Chill in the refrigerator for at least 2 hours before serving.
