Dump-and-Bake Broccoli Cheddar Rice

A simple and comforting one-pan meal featuring creamy cheddar and nutritious broccoli, perfect for busy weeknights.

  • 2 cups uncooked long-grain rice
  • 4 cups vegetable broth
  • 4 cups broccoli florets
  • 2½ cups shredded cheddar cheese
  • 1 can cream of celery soup

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9×13 inch baking dish, greasing it lightly if desired.
  3. Combine the uncooked rice, then pour in the vegetable broth.
  4. Add the broccoli florets and distribute them evenly.
  5. Mix the cream of celery soup with 1 cup of shredded cheddar and pour over the rice and broccoli.
  6. Stir everything together until well combined.
  7. Top with the remaining cheddar cheese.
  8. Cover with aluminum foil and bake for about 30 minutes.
  9. Uncover and bake for an additional 15-20 minutes until bubbly.
  10. Let sit for 10 minutes before serving.
