Creamy Pasta Salad

A vibrant and flavorful creamy pasta salad perfect for picnics and family gatherings.

Ingredients

  • 1 lb (450g) Fusilli pasta
  • 1 cup diced Red pepper
  • ⅓ cup chopped celery
  • ½ cup feta cheese, crumbled
  • 1 cup cherry tomatoes, halved
  • ⅓ cup diced red onions
  • 1 cup cucumber, chopped
  • 1 teaspoon dried dill
  • Salt and freshly ground pepper to taste
  • Green onions to garnish
  • 1 cup light mayonnaise
  • 1 tablespoon lemon juice (or as needed)

Instructions

  1. Bring a pot of salted water to a boil. Add the fusilli pasta and cook according to the package instructions, usually around 8–10 minutes.
  2. While the pasta is cooking, chop your vegetables: dice the red pepper, celery, cucumbers, and red onions. Halve the cherry tomatoes.
  3. Once the pasta is done, drain it in a colander and rinse it under cold water.
  4. In a large bowl, combine the light mayonnaise, lemon juice, dill, salt, and pepper. Whisk until the dressing is smooth.
  5. In the same bowl, add the cooled pasta, chopped vegetables, and crumble the feta cheese on top. Gently toss until everything is nicely coated.
  6. Cover the bowl with plastic wrap and chill in the fridge for at least 30 minutes.
  7. When ready to serve, give it a good stir and adjust seasoning if needed. Top with green onions.
