Spinach Artichoke Gnocchi

A comforting dish featuring fluffy gnocchi in a creamy spinach artichoke sauce, perfect for chilly days.

  • 1 package store-bought gnocchi
  • 2 cups fresh spinach (or frozen, thawed and drained)
  • 1 can artichoke hearts, drained and roughly chopped
  • 1 cup heavy cream (or half-and-half/cashew cream for lighter version)
  • 4 oz cream cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for sautéing
  • Optional: red pepper flakes, lemon juice, fresh basil for garnish

Instructions

  1. Boil the gnocchi according to package instructions until they float (about 2-3 minutes).
  2. Heat a large pan over medium heat and drizzle with olive oil.
  3. Add minced garlic and sauté for about 1 minute until fragrant.
  4. Toss in the fresh spinach and chopped artichoke hearts; stir until the spinach wilts down (about 2-3 minutes).
  5. Stir in the heavy cream and bring to a gentle simmer to thicken slightly.
  6. Add cream cheese; stir until melted, then add mozzarella and Parmesan until creamy.
  7. Combine the cooked gnocchi with the sauce; let simmer for another couple of minutes.
  8. Adjust seasoning with salt, pepper, and optional lemon juice.
