Creamy Tomato Chicken Pasta

  • 8 oz Pasta (Farfalle, Penne, or Spaghetti)
  • 2 Chicken Breast (boneless and skinless)
  • 2 tbsp Olive Oil
  • 3 Garlic cloves (minced)
  • 14 oz Crushed Tomatoes (canned)
  • 1 cup Heavy Cream
  • 1/2 cup Parmesan Cheese (freshly grated)
  • Fresh Basil (for garnish)
  • Salt and Pepper to taste

Instructions

  1. Boil the pasta by filling a large pot with water, salting it generously, and bringing it to a boil over high heat. Cook according to package instructions until al dente.
  2. Cook the chicken in a large skillet over medium heat with olive oil, seasoning with salt and pepper. Cook for 6-7 minutes per side until golden brown.
  3. Make the sauce by adding minced garlic to the skillet, sautéing for 30 seconds, then pouring in the crushed tomatoes and simmering for 5-7 minutes.
  4. Add heavy cream and freshly grated parmesan to the sauce, stirring until melted and well combined.
  5. Combine the cooked pasta and sliced chicken with the sauce, tossing until everything is well-coated.
  6. Serve topped with fresh basil and additional parmesan.

Feel free to adjust the ingredients based on your dietary needs. Substitute chicken with sautéed mushrooms for a vegetarian option.
