Creamy Tomato Garlic Pasta

A comforting and creamy dish blending juicy tomatoes, rich cream, and savory garlic, perfect for any occasion.

  • 200g Pasta (fettuccine, spaghetti, or penne)
  • 2 tablespoons Olive Oil
  • 4 cloves Garlic, minced
  • 1 can (14 oz) Canned Diced Tomatoes
  • 1 cup Heavy Cream
  • 1/2 cup Parmesan Cheese, grated
  • A handful Fresh Basil, chopped
  • Salt and Pepper, to taste

Instructions

  1. Boil Water: Fill a large pot with water and bring it to a rolling boil. Add a pinch of salt.
  2. Add Pasta: Once boiling, toss in the pasta and cook according to the package instructions (9-11 minutes for al dente). Reserve about 1 cup of the cooking water.
  3. Heat Olive Oil: In a large skillet over medium heat, heat olive oil for about a minute.
  4. Add Garlic: Once the oil is shimmering, add the minced garlic and sauté for about 1-2 minutes until fragrant.
  5. Add Diced Tomatoes: Pour in the canned diced tomatoes (juices included) and let it simmer for about 5-7 minutes.
  6. Season It Up: Sprinkle in salt, pepper, and red pepper flakes if desired.
  7. Add Heavy Cream: Reduce heat to low and stir in the heavy cream, letting it simmer for another 2-3 minutes.
  8. Stir in Cheese: Add in the grated parmesan cheese, stirring until melted.
  9. Combine Pasta and Sauce: Drain the pasta and add it to the skillet, tossing until well coated. If too thick, add reserved pasta water.
  10. Finish with Basil: Toss in the chopped fresh basil before serving.

Notes

Serve with crusty bread and a light salad. This pasta can be made vegan by substituting heavy cream with coconut cream and parmesan cheese with nutritional yeast.
