Crispy Buffalo Chicken and Smoky Street Corn Salad

A vibrant salad featuring crispy buffalo chicken and smoky corn, perfect for weeknight dinners or gatherings.

  • 2 cups cooked buffalo chicken, shredded
  • 2 cups corn (fresh or canned)
  • 1 red bell pepper, diced
  • ½ cup red onion, diced
  • 1 avocado, diced
  • ¼ cup cilantro, chopped
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 cup mixed greens or romaine lettuce

Instructions

  1. Prepare the Buffalo Chicken: Cook your chicken (grilled or baked), and toss it with buffalo sauce until coated, then set aside.
  2. Cook the Corn: Grill or sauté fresh corn until charred or lightly sauté canned corn in a skillet.
  3. Prep the Veggies: Dice red bell pepper, red onion, and avocado, and chop cilantro. Place in a large mixing bowl.
  4. Make the Dressing: Whisk lime juice, olive oil, and a pinch of salt and pepper in a small bowl.
  5. Combine Everything: Add buffalo chicken and corn to the veggies, drizzle with dressing, and toss gently.
  6. Serve on a Bed of Greens: Lay mixed greens on plates and spoon the buffalo chicken and corn mix over the top.
  7. Garnish and Enjoy: Sprinkle with cilantro and add a squeeze of lime if desired.
