Cheesy Zucchini Breadsticks

A delicious twist on traditional breadsticks, these Cheesy Zucchini Breadsticks are a fun way to sneak more veggies into your meals.

  • 2 medium zucchinis (about 2 cups shredded)
  • 2 large eggs
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup shredded mozzarella cheese (for topping)
  • Optional: fresh parsley or basil for garnish

Instructions

  1. Preheat the Oven: Start by preheating your oven to 425°F (220°C).
  2. Prep the Zucchini: Grate the zucchinis and squeeze out as much moisture as possible.
  3. Mix the Ingredients: In a large mixing bowl, whisk together the eggs. Add in zucchini, mozzarella, Parmesan, garlic powder, Italian seasoning, salt, and black pepper; stir until combined.
  4. Shape the Mixture: Line a baking sheet with parchment paper and spread the mixture into a rectangle about ¾-inch thick.
  5. Bake: Bake for 20–25 minutes until golden and set.
  6. Add Toppings: Remove from oven, sprinkle additional mozzarella on top, and return for another 5 minutes.
  7. Cool and Slice: Allow to cool for a few minutes, then slice into sticks.
  8. Garnish and Serve: Sprinkle herbs on top before serving.

Notes

These breadsticks are best enjoyed warm, and can be served with marinara sauce or a zesty pesto for dipping.
