Ingredients

  • Store-bought or homemade biscuits
  • Cooked and seasoned chicken breast (or rotisserie chicken)
  • Red, yellow, and green bell peppers
  • Onions (red or yellow)
  • Cumin
  • Chili powder
  • Olive oil
  • Your choice of cheese (cheddar, Monterey Jack, or pepper jack)
  • Non-stick cooking spray or butter (for greasing)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the biscuit cups by flattening each biscuit.
  3. Grease the muffin tin to prevent sticking.
  4. Shape the biscuits into cups in the muffin tin.
  5. Sauté the vegetables in olive oil until they soften.
  6. Add the cooked chicken and spices, and heat through.
