Street Corn Chicken Flatbread

A delicious flatbread topped with juicy chicken, sweet corn, fresh herbs, and a zesty chipotle sauce, reminiscent of street corn from lively markets.

Ingredients

  • Flatbread
  • Boneless, skinless chicken breast
  • Fresh or canned corn
  • Avocado
  • Cotija cheese
  • Lime
  • Cilantro
  • Chipotle sauce

Instructions

  1. Season the chicken breasts with salt, pepper, and your favorite spice. Cook in a skillet over medium-high heat for 6–7 minutes on each side until golden brown. Let rest and slice.
  2. Boil fresh corn for 3 minutes until tender. If using canned or frozen corn, drain and set aside.
  3. Combine chipotle sauce with lime juice in a small bowl and adjust to taste.
  4. Layer sliced chicken and corn on flatbreads.
  5. Sprinkle crumbled cotija cheese over the top.
  6. Preheat oven to 400°F (200°C) and bake flatbreads for 10-12 minutes.
  7. Top with avocado slices, cilantro, and a squeeze of lime before serving.
  8. Slice and serve on a platter with extra lime and chipotle sauce.

Notes

Feel free to replace chicken with black beans for a vegetarian option or add jalapeños for extra heat.
