Crispy Sweet Potato and Red Lentil Patties

Deliciously crispy sweet potato and red lentil patties perfect for any occasion.

Ingredients

  • 1 cup red lentils
  • 2 medium sweet potatoes (about 2 cups mashed)
  • 1 onion, finely diced
  • 2 garlic cloves, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 cup breadcrumbs
  • Salt and pepper to taste
  • 1 tablespoon olive oil (for frying)

Instructions

  1. Start by rinsing your red lentils under cold water until the water runs clear.
  2. In a medium saucepan, combine the washed lentils with 2 cups of water.
  3. While the lentils are cooking, prepare your sweet potatoes.
  4. Boil your sweet potatoes in a separate pot until they’re tender (about 10-15 minutes).
  5. In a large mixing bowl, combine the mashed sweet potatoes, cooked lentils, diced onion, minced garlic, and spices.
  6. Add your breadcrumbs gradually, mixing until you achieve a consistency that’s tacky enough to hold.
  7. With wet hands, scoop out a handful of the mixture and shape it into a patty.
  8. Heat a skillet over medium heat and add olive oil until it shimmers.
  9. Carefully add the patties to the skillet, ensuring not to overcrowd the pan.
  10. Cook for about 4-5 minutes on each side until golden brown and crispy.
  11. Serve your crispy sweet potato and red lentil patties hot or let them cool down a bit.

Notes

For a gluten-free option, use crushed rice cereal or gluten-free breadcrumbs. You can also bake these patties at 400°F (200°C) for 25-30 minutes.
