Dump-and-Bake Beef Enchilada Casserole

A quick and easy beef enchilada casserole that captures the delicious flavors of traditional enchiladas without the fuss—perfect for busy weeknights!

  • 2 lbs lean ground beef
  • 10 corn tortillas, torn
  • 2 cups enchilada sauce
  • 2 cups Mexican cheese blend
  • 1 can black beans, drained

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Brown the ground beef in a large skillet over medium heat until it’s no longer pink, about 6-8 minutes.
  3. Season the beef with salt, pepper, and other spices like cumin and garlic powder.
  4. Layer a thin layer of enchilada sauce in a 9×13-inch baking dish and scatter half of the torn tortillas over it.
  5. Add half of the cooked ground beef, half of the black beans, and half of the cheese.
  6. Repeat the layers with more tortillas, the remaining beef, beans, enchilada sauce, and cheese.
  7. Pour any remaining enchilada sauce over the top and sprinkle with the rest of the cheese.
  8. Bake for 25-30 minutes until bubbly and golden.
  9. Rest the casserole for about 10 minutes before serving.
