Dump-and-Bake Buffalo Chicken Casserole

A deliciously easy casserole featuring juicy chicken, crunchy cauliflower, and a creamy buffalo ranch sauce, all baked together for a comforting meal.

  • 2 lbs chicken breast, cubed
  • 1 head cauliflower, chopped
  • 1/2 cup buffalo sauce
  • 1 cup ranch dressing
  • 2 cups cheddar cheese, shredded

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare a large baking dish (about 9×13 inches) and lightly grease it with cooking spray or olive oil.
  3. Combine the cubed chicken and chopped cauliflower in the greased baking dish.
  4. Add the buffalo sauce and ranch dressing over the chicken and cauliflower, mixing slightly to coat.
  5. Top with the grated cheddar cheese evenly over the mixture.
  6. Bake for about 30-35 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
  7. Cool for about 5 minutes before serving.

Notes

For a lighter option, consider using Greek yogurt instead of ranch dressing. You can also use rotisserie chicken for speedier prep.
