Dump-and-Bake Salsa Chicken Rice

A flavorful, easy weeknight meal featuring tender chicken breasts, perfectly cooked rice, zesty salsa, and gooey melted cheese.

  • 2 lbs chicken breast
  • 2 cups uncooked rice
  • 2 cups salsa
  • 2 cups chicken broth
  • 1 cup Mexican cheese
  • 1 tsp chili powder

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare a large baking dish (around 9×13 inches).
  3. Throw in the rice, spreading it evenly at the bottom of the dish.
  4. Add the chicken breasts over the rice.
  5. Pour the salsa over the chicken and add the chicken broth around the edges.
  6. Sprinkle chili powder evenly over the top.
  7. Cover with aluminum foil and bake for 45-50 minutes.
  8. Add cheese on top and bake uncovered for another 10 minutes.
  9. Let it rest for 5-10 minutes before serving.
  10. Serve and enjoy!

Notes

Garnish with fresh cilantro or sliced green onions. Serve with avocado, sour cream, or extra salsa on the side.
