Dump-and-Bake Southwest Chicken

A simple, delicious one-dish meal featuring juicy chicken, black beans, corn, and salsa, baked with melty Monterey Jack cheese.

  • 2 lbs chicken breast, cubed
  • 1 can black beans, drained
  • 1 cup corn
  • 2 cups salsa
  • 2 cups cooked brown rice
  • 2 cups Monterey Jack cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare a large mixing bowl or 9×13-inch baking dish, lightly greasing it.
  3. Combine the cubed chicken, drained black beans, corn, salsa, and cooked brown rice in the bowl.
  4. Transfer the mixture to the greased baking dish, spreading it evenly.
  5. Top with a generous amount of Monterey Jack cheese.
  6. Bake covered with aluminum foil for about 30 minutes, then uncover and bake for an additional 10-15 minutes until the chicken is cooked through and the cheese is bubbly and golden.
  7. Serve and enjoy with fresh garnishes like cilantro, avocado, or lime juice.
