Easy Asian Cucumber Salad

A refreshing and crunchy cucumber salad with a zesty dressing, perfect for summer meals or as a light snack.

  • 23 medium-sized Cucumbers
  • 3 tablespoons Rice Vinegar
  • 2 tablespoons Soy Sauce
  • 1 tablespoon Sesame Oil
  • 1 teaspoon Sugar
  • 1 clove Garlic, minced
  • 1 tablespoon Fresh Ginger, minced
  • 2 Green Onions, minced
  • 1 tablespoon Sesame Seeds, for garnish

Instructions

  1. Prep your Cucumbers: Wash and peel (if desired) the cucumbers. Slice in half lengthwise and cut into half-moons about ¼ inch thick.
  2. Make the Dressing: In a mixing bowl, combine rice vinegar, soy sauce, sesame oil, sugar, garlic, and ginger. Whisk until sugar dissolves.
  3. Combine Everything: Toss together the cucumbers and green onions, then drizzle with the dressing and toss until well-coated.
  4. Garnish & Serve: Right before serving, sprinkle with sesame seeds and enjoy chilled.

Notes

For the best flavor, let the salad sit for 10-15 minutes before serving. It pairs well with grilled meats or can be enjoyed on its own.
