Easy Crack Chicken Casserole

  • 2 cups cooked chicken, shredded
  • 8 oz cream cheese, softened
  • 1 packet ranch seasoning mix
  • 1 cup cheddar cheese, shredded
  • ½ cup bacon bits (cooked)
  • 2 cups mixed vegetables (frozen or fresh)
  • 1 cup chicken broth
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the softened cream cheese and ranch seasoning mix in a large mixing bowl until smooth.
  3. Add the shredded chicken and chicken broth, stirring until everything is evenly coated.
  4. Toss in the mixed vegetables and bacon bits, ensuring they are well distributed.
  5. Layer in a cup of shredded cheddar cheese into the mixture.
  6. Prepare a 9×13-inch baking dish by greasing it with cooking spray or butter.
  7. Pour the mixture into the baking dish and spread it out evenly.
  8. Top with the remaining cheese.
  9. Bake for about 30-35 minutes until gooey and bubbly.
  10. Serve and enjoy after cooling for a few minutes.

Notes

For a crunchy topping, mix panko breadcrumbs with melted butter and sprinkle over the cheese for the last 10 minutes of baking.
