Easy Crockpot Chicken Fajitas

A flavorful, easy-to-make dish that brings the vibrant spirit of Mexico to your dinner table using a crockpot.

  • 2 pounds Chicken breast
  • 23 Bell peppers (assorted colors)
  • 1 large Onion (sliced)
  • 4 cloves Garlic (minced)
  • 2 teaspoons Chili powder
  • 1 teaspoon Cumin
  • Lime juice (from 1 lime)
  • Salt & pepper (to taste)
  • Corn tortillas (for serving)
  • Toppings (sour cream, cheese, salsa, avocado, cilantro)

Instructions

  1. Prepare the chicken by trimming off any excess fat.
  2. Mix the marinade with lime juice, chili powder, cumin, garlic, salt, and pepper in a bowl.
  3. Add the sliced bell peppers and onion into the crockpot over the chicken.
  4. Cook on low for 6-8 hours or high for 3-4 hours.
  5. Shred the chicken in the pot using two forks.
  6. Warm the corn tortillas in a skillet for about 30 seconds on each side.
  7. Assemble your fajitas with the chicken mix and your choice of toppings.
