Easy Healthy Broccoli Pasta

A delicious and nutritious pasta dish featuring vibrant broccoli, garlic, and a touch of lemon, perfect for the whole family.

  • 8 oz whole grain or gluten-free pasta
  • 2 cups fresh broccoli, cut into florets
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Zest and juice of 1 lemon
  • 1/4 cup grated Parmesan cheese (optional)
  • Salt and pepper to taste

Instructions

  1. Prepare the broccoli by rinsing and cutting it into bite-sized florets.
  2. Cook the pasta in salted boiling water until al dente, adding the broccoli florets in the last 2-3 minutes.
  3. Sauté garlic in olive oil in a skillet over medium heat until fragrant.
  4. Combine drained pasta and broccoli with the garlic, lemon zest, and juice, and season with salt and pepper.
  5. Finish by adding Parmesan cheese and tossing everything together.
  6. Taste and adjust seasoning if needed.

Notes

Serve warm, garnished with extra Parmesan and crushed red pepper flakes. For a richer sauce, you can add cream or a dollop of sour cream.
