  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, finely chopped
  • 1 bell pepper, diced
  • 2 cups spinach or mixed greens
  • Salt and pepper, to taste
  • 2 tablespoons olive oil or dressing of choice

Instructions

  1. Prep your base: Start by grabbing a large mixing bowl. Scoop 1-2 cups of cottage cheese into the base.
  2. Chop the veggies: Dice your cucumber and bell pepper into bite-sized pieces. Slice the cherry tomatoes in half. Chop the red onion finely.
  3. Add the greens: Rinse your spinach or mixed greens. Dry them and roughly chop before adding to the bowl.
  4. Season to perfection: Sprinkle salt and pepper over the mixture as you go.
  5. Drizzle and toss: Drizzle olive oil or your dressing of choice over the salad. Gently toss the ingredients together.
  6. Taste test: Use a fork to taste and adjust seasoning and dressing as needed.
  7. Plate and serve: Serve the salad into individual bowls, adding extra veggies on top for presentation.
