Easy Summer Tortellini Pasta Salad

A delightful tortellini pasta salad brimming with fresh herbs, arugula, sweet peas, and a zesty dressing, perfect for summer gatherings.

Ingredients

  • 1 package Tortellini (fresh or frozen)
  • Fresh Herbs (Basil, Parsley, or Dill)
  • 2 cups Arugula
  • 1 cup Peas (fresh or frozen)
  • 1/2 cup Parmesan Cheese (shaved or grated)
  • Juice of 1 Lemon
  • 3 tablespoons Olive Oil
  • 1 teaspoon Oregano
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Cook the Tortellini by bringing a large pot of salted water to a boil. Toss in your tortellini and cook according to the package instructions, usually about 3-5 minutes for fresh or 6-8 minutes for frozen.
  2. Prepare the Dressing by whisking together olive oil, lemon juice, and salt and pepper in a small bowl.
  3. Add the Peas during the last minute of cooking the tortellini.
  4. Drain and rinse the tortellini and peas under cold water.
  5. Toss the cooled tortellini and peas with arugula, fresh herbs, and Parmesan in a large mixing bowl. Pour the dressing over top and gently combine.
  6. Chill in the fridge for at least 30 minutes before serving.

Notes

This salad keeps beautifully in the fridge for up to 3 days. Adjust seasoning as needed and feel free to add additional veggies or proteins.
