  • 1.5 cups Water
  • 2 cups Fresh Baby Spinach
  • 1 cup Dried Cranberries
  • 1 cup Pecans
  • 2 tablespoons Chives
  • 3 tablespoons Olive Oil
  • Juice of 1 Lemon

  2. Toast the Pecans: While the couscous is steaming, heat a dry skillet over medium heat. Add the pecans and toast them for about 3–5 minutes until they’re fragrant.
  3. Combine the Ingredients: In a large mixing bowl, combine the cooked couscous, toasted pecans, dried cranberries, and fresh baby spinach.
  4. Prepare the Dressing: In a small bowl, whisk together olive oil, lemon juice, and salt and pepper.
  5. Toss and Serve: Drizzle the dressing over the salad mixture and toss everything together until well combined.
