French Onion Chicken Orzo Casserole

A cozy casserole combining tender chicken, flavorful orzo, and sweet caramelized onions, all topped with melted cheese.

  • 2 cups cooked chicken, shredded
  • 1 ½ cups orzo pasta
  • 2 large onions, thinly sliced
  • 1 cup beef broth
  • 1 cup cream of mushroom soup
  • 1 cup shredded Gruyère cheese (or Swiss cheese)
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, drizzle in the olive oil and add the thinly sliced onions. Cook until golden brown and caramelized—about 15-20 minutes.
  3. Bring a medium pot of salted water to a boil and add the orzo. Cook according to the package instructions until al dente (8-10 minutes).
  4. In a large mixing bowl, combine the shredded chicken, cooked orzo, caramelized onions, beef broth, cream of mushroom soup, and half of the Gruyère and mozzarella cheese. Season with salt and pepper, and mix well.
  5. Transfer the chicken-orzo mixture into a greased casserole dish. Sprinkle the remaining cheese on top.
  6. Pop the casserole in the preheated oven and bake for approximately 30-35 minutes, or until the cheese is bubbly and golden brown.
  7. Let your casserole sit for about 5-10 minutes before serving.

Notes

Feel free to customize with veggies, spices, or different cheeses. This dish can be prepared ahead and is great for meal prep!
