Vibrant Fresh Salad

A colorful and flavorful salad packed with fresh greens, vegetables, and a zesty dressing, perfect for any meal.

Ingredients

  • Mixed Greens (Spinach, Arugula, or Romaine)
  • Cherry Tomatoes
  • Cucumbers
  • Red Onion
  • Avocado
  • Feta Cheese (or Goat Cheese)
  • Nuts (Almonds or Walnuts)
  • Olive Oil
  • Balsamic Vinegar

Instructions

  1. Prepare your greens by rinsing them and patting them dry.
  2. Chop the vegetables, including halving the cherry tomatoes and slicing the cucumber.
  3. Cut the avocado, and slice or cube it just before adding.
  4. Crumble feta or goat cheese over the salad.
  5. Add a handful of nuts for crunch.
  6. Whisk together olive oil and balsamic vinegar for the dressing.
  7. Assemble the salad by combining all ingredients and drizzling the dressing over the top.
  8. Taste the salad and adjust seasoning as needed.

Notes

Serve with grilled chicken or fish for a complete meal. This salad can be made in advance; just prep veggies and dressing separately.
