  • 1 cup bell peppers, chopped
  • 1 cup olives
  • 1 cup cherry peppers, sliced
  • 2 cups white vinegar
  • 1 cup water
  • 2 tablespoons salt
  • 1 tablespoon sugar
  • 1 teaspoon oregano
  • 1 teaspoon red pepper flakes
  • 1/2 cup olive oil

Instructions

  1. Prepare the vegetables: Wash and chop your vegetables into bite-sized pieces.
  2. Mix the brine: In a medium saucepan, combine the white vinegar, water, salt, sugar, oregano, and red pepper flakes. Bring to a gentle boil over medium heat.
  3. Pack the jars: Start packing your veggies into clean, sterilized jars.
  4. Pouring the brine: Carefully pour the hot brine over the packed veggies, ensuring they are fully submerged.
  5. Seal it up: Secure the jars with lids while the brine is still hot and let them cool at room temperature.
  6. Let it sit: For the best flavor, let your Giardiniera marinate in the fridge for at least 24 hours.

Notes

For best results, allow Giardiniera to sit for a week. Modify spice levels by adjusting cherry peppers.
